Essential Crosshatch Grill Marks

Crosshatch grill marks don't only show your guests that you know what you're doing when your succulent creations come off the grill, they serve a purpose as well. Not giving your grilled meat and vegetables a quarter turn, will give too much grate surface contact resulting in over-charring them.

On your total per side grill time give your meat / vegetables a quarter turn halfway through. Repeat when you grill them on the other side. To get good grill marks in the first place, you need to use cast iron or cast aluminum grates. The flimsy thin steel grates coming as a standard issue with weber kettle grills, for example, wont’t cut it.
